
Uruguay means River of Painted Birds in the native language of Guarani. Amongst our rolling hills and thousands of small rivers, birds live freely and fish are abundant. Resting on the Atlantic Ocean between 30º and 35º parallel Uruguay shares the same latitude with the ultimate wine–growing regions of the Southern Hemisphere. The cool weather, rolling hills and maritime climate make it especially fit for the cultivation of the fine grapes.
The Original Champenoise Method of fermentation in bottle was developed in France in the XVIIth century by the legendary monk Dom Pérignon from the Hautvillers Abbey. For many years our Brut Nature sans dosage Champenoise Method, due to its high cost was exclusively produced for consumption of the Family.
Produced in very small amounts, bottle by bottle, our Family fulfils the onerous daily rotation ritual of each one, to release the sediments. The cooling of the bottles is made the old way in half barrels with ice bars and salt. Old manual machines from the 19th century have been restored for corking and putting the wire cap. We have obtained an elegant, powerful and perfumed wine, of light and lively bubbles. Because of its ultra handcrafted nature, it can form very light sediments that do not restrict its quality.
